We want to meet the woman who wakes up early to pound stalks of lemongrass. We’re excited about the father-son team tending corn kernels in a mountain of hot ash. And our collective sweet tooth aches for the family arrived from Somalia, up all night, taking turns stirring a deep orange, buttery goo that will, by morning, cool into big sheets of cardamom candy.
These are just snapshots. There are many more examples of people in our town cooking magical dishes behind closed doors. Some are operating a side hustle they’d like to scale up and make official. Others have gone out of business—learning valuable, if painful, lessons along the way. Still others are totally new to this but have good instincts and great food. We want them. We want you.

While construction is underway at 484 South Salina Street, we are holding interviews and auditions.
Selected food vendors will:
- Receive training in ServSafe, Food Presentation & Production
- Sell food direct to the public (with support from our team) beginning in March 2019
- Cook for 500+ guests at large events in May and / or October 2019
- Receive Formal Business Training from Up Start
Once vendors have successfully completed the above, each will attend a Field Trip to a Major Food Hub in NYC, D.C., Toronto or Boston. Think of this as your chance to meet thriving business owners working in your cuisine and to ask questions, learn best practices and collect new ideas.
